Preheat griddle to 375° or on medium-slightly-high flame.
1 cup flour
1/2 cup corn meal
1/4 cup buckwheat
1/4 cup ground flax seed
1 T baking powder
1 tsp. baking soda
Mix dry ingredients in bowl.
In a separate bowl, mix:
2 cups orange juice OR 2 cups unfiltered apple juice OR 1 cup milk and 1 cup juice
1/4 cup oil
Combine and whisk together. Try to not overmix is the general advice.
Makes about 12 pancakes. Add milk or juice if necessary to thin.
(CARBS equal about 24g per pancake with full amount of juice. I generally split the milk and juice, making them about 22g per pancake.)
