Today is a perfect day for peanut-butter chocolate chip cookies. (carbs = 15 g)
RECIPE:Oven to 375.
Mix 1/2 cup peanut butter with 1/2 cup butter.
Add 1/2 cup flour, one egg, 1/2 cup sugar, 1/2 cup brown sugar, 1/2 tsp. vanilla, 1/2 tsp. baking soda, 1/2 tsp. baking powder.
Add another 3/4 cup flour.
Roll dough into 1-inch balls.
Roll in sugar if you want.
If not using chocolate chips, press cookie balls with fork tines to make criss-crosses.
Otherwise, bake for about 8 minutes, until bottoms are just browned, then immediately lightly press 3 or 4 chocolate chips into the tops of the cookies.
Cool on wire rack.
